This farm has been run by the Grajales family for 100 years. Grown over the years and repeatedly divided into new small fincas, not only coffee and cocoa are grown here, but also other crops to keep the soil fertile and to give the coffee the shade it needs.
This coffee from the Castillo Arabica variety is washed, processed, dried and, contrary to the norm, decaffeinated directly on site immediately after harvest. Compared to decaffeination in Germany, this does not happen with chemicals or steam, but with sugar cane, from which a natural solvent for decaffeination is extracted, in which the coffee is then bathed to bind the caffeine. After another wash, the coffee is then machine-dried in order to achieve stable residual moisture in the coffee.
The taste of this full-bodied coffee with its extraordinary bouquet is reminiscent of dark chocolate with notes of sweet cherries, oranges and a light aroma of marzipan. A medium acidity completes a strong, round-bodied coffee.
