Recipe : 18 gr for 300 ml of water in the V60 and add 5 pours of 60 gr of water whenever the coffee bed is almost dry.

Finca Isabel is located at an altitude between 1200 and 1400 meters above sea level in the Nuevo Oriente region. This rainy, formerly volcanic region features very mineral-rich soils that allow Alejandro to thrive the finest coffees .
Alejandro belongs to the fourth generation of coffee farmers and is the mastermind behind Finca Santa Isabel. Only biodynamic cultivation is used here and the highest value is placed on ecological and social aspects . Grown in the dense shade of a highly protected ecosystem, they invest a great deal of time and effort into improving the health and quality of their coffees.
Harvested here from October to January, and only what is ripe. In addition to the Sarchimor that we have in our program for you, other Arabicas such as Pache , Icatu and Castillo as well as Robusta are also grown here.
This washed coffee stands out for its beautiful juiciness and clarity. Roasted as filter coffee , this coffee is suitable for all filter methods such as the hand filter, Aeropress and also the coffee machine, this coffee also shines as a French press.
The first thing you notice in the cup is the juiciness of the coffee, which combines the natural chocolate aromas with those of yellow stone fruits. A fairly creamy, full-bodied body rounds off the cup perfectly and makes this coffee a special experience.
We are very happy to work with Alejandro and get his coffee from Marcos and Christina from Los Amigos. The two are excellent sourcers and traders for the finest specialty coffees and always strive for sustainable relationships between farmers, roasters and end customers. We are looking forward to another trip with them and Alejandro - and are thrilled about the quality of his coffee.
